Rice and Bean Bake

Whip up a delicious meatless casserole with just 2 easy steps and 10 minutes of prep time!
Ingredients:
  • 1 cup uncooked regular long-grain white rice
  • 1 1/2 cups boiling water
  • 1 tablespoon vegetable or chicken bouillon granules
  • 1 1/2 teaspoons chopped fresh or 1/2 teaspoon dried marjoram leaves
  • 1 medium onion, chopped (1/2 cup)
  • 1 can (15 oz) Progresso™ dark red kidney beans, undrained
  • 1 box (9 oz) frozen baby lima beans, thawed, drained
  • 1/2 cup shredded Cheddar cheese (2 oz)
Instructions:
  • Preheat oven to 350°F. Combine all ingredients, except cheese, in an ungreased 2-quart casserole dish.
  • Bake covered for 1 hour to 1 hour 5 minutes until liquid is absorbed. Stir well and sprinkle with cheese.
