Try this delicious Asian pork and rice dish for a new family favorite.
Ingredients:
  • 300.00 gm jasmine rice, rinsed
  • 18.20 gm peanut oil
  • 20.00 ml chopped lemongrass
  • 2 garlic cloves, finely chopped
  • 500g pork mince
  • 1 red onion, halved, thinly sliced
  • 1/2 small pineapple, chopped
  • 76.25 gm fish sauce
  • 10.00 gm caster sugar
  • 21.00 gm light soy sauce
  • 2 limes, juiced
  • 12 small cos lettuce leaves
  • 82.50 ml roasted peanuts, chopped
Instructions:
  • Prepare the rice according to the absorption method on the package. Once cooked, remove from heat, cover, and let it stand for 5 minutes. Transfer the rice to a large bowl and allow it to cool before using.
  • Heat a wok over medium-high heat, then add oil, lemongrass, and garlic. Sauté for 30 seconds. Add pork and cook for 5 minutes, breaking up lumps with a wooden spoon until lightly browned. Pour in 1/2 cup cold water and simmer for 5 minutes or until absorbed. Finally, mix in onion and pineapple, and let it cool before serving.
  • Combine fish sauce, sugar, soy sauce, and 1/3 cup lime juice in a small bowl. Mix well. Combine the sauce and pork mixtures with rice. Place lettuce on a platter, top with rice mixture, sprinkle with peanuts, and serve.
