Whip up a delicious pork mince meal in just 30 minutes!
Ingredients:
  • 50g jasmine rice
  • 18.20 gm peanut oil
  • 500g pork mince
  • 1 stalk lemongrass, white part only, chopped
  • 2 garlic cloves, crushed
  • 20.00 ml finely grated ginger
  • 1 long fresh red chilli, seeded, finely chopped
  • 42.00 gm lime juice
  • 48.80 gm fish sauce
  • 8.00 gm brown sugar
  • 110g bean sprout
  • 4 green onions, trimmed, thinly sliced diagonally
  • 2 purple Asian shallots, thinly sliced
  • 250.00 ml coriander leaves
  • 250.00 ml round mint leaves
  • Baby cos lettuce leaves, to serve
Instructions:
  • Heat a wok over medium heat and add the rice. Cook and stir for 3-4 minutes until lightly golden brown. Transfer to a mortar and gently crush with a pestle. Set aside.
  • Heat oil in wok over high heat until it shimmers. Add the pork and stir-fry for 10 minutes until it changes color and starts to brown. Toss in lemongrass, garlic, ginger, and chili and cook for 2 minutes until fragrant. Remove from heat, then stir in lime juice, fish sauce, and sugar. Let it sit for 10 minutes to cool slightly.
  • Combine the bean sprouts, green onion, shallots, half of the coriander, and half of the mint, gently tossing them together.
  • Arrange fresh, crispy lettuce on individual serving plates. Generously spoon the flavorful pork mixture into each bowl. Garnish with a sprinkle of fresh coriander and mint, then finish off with a generous portion of fragrant rice on top. Serve promptly to enjoy the flavors at their best.
