Rice pudding with roasted strawberries recipe

Cozy up with warm rice pudding topped with sauteed strawberries and crunchy pistachios. A comforting dessert for chilly days.
Ingredients:
  • 150g white rice
  • 1l milk
  • 125ml maple syrup
  • 500g strawberries, halved
  • 40.00 ml pistachios, toasted, chopped
Instructions:
  • Give the rice a quick rinse under cold water, then let it drain well. In a medium saucepan over high heat, mix the rice and milk together and bring it to a boil.
  • Lower the heat and let the mixture simmer gently, stirring frequently, for 20-25 minutes, or until the rice is tender. Gently fold in half of the maple syrup.
  • Preheat the oven to 180°C. In a small baking dish, mix the strawberry with the rest of the maple syrup. Roast for about 20 minutes, or until the strawberry starts to soften.
  • Serve the rice pudding in individual bowls, top with the strawberry mixture, and garnish with pistachios.
