Delightful saffron and cardamom rice pudding, perfect for a Thanksgiving treat.
Ingredients:
  • 1 cup rice flour
  • 0.5 cup white sugar
  • 2 cups milk
  • 2 tablespoons rose water
  • 0.5 teaspoon saffron
  • 0.5 teaspoon ground cardamom
  • 18 shelled pistachio nuts
Instructions:
  • In a saucepan over medium heat, blend water, rice flour, and sugar into a smooth mixture. Stir constantly until thickened, approximately 5 minutes.
  • Combine the milk, rose water, saffron, and cardamom in a bowl, then pour into the rice mixture. Heat until boiling, stirring constantly for about 5 minutes until smooth.
  • Gently pour the warm mixture into 6 cups. Top each with 3 pistachios and chill in the refrigerator for at least 1 hour.
