Rice-A-Roni Salad

Creamy dressing with a kick coats rice and chicken salad, with water chestnuts and celery for crunch.
Ingredients:
  • 1 (13.8 ounce) package chicken flavored rice mix (e.g. Rice A Roni)
  • 0.25 tablespoon butter
  • 5 cups water
  • 1 bunch green onions, chopped
  • 1 (8 ounce) can water chestnuts, drained and chopped
  • 1 cup chopped celery
  • 1 cup chopped cooked chicken breast meat
  • 0.5 cup mayonnaise
  • 1 dash Worcestershire sauce
  • salt and pepper to taste
Instructions:
  • In a large saucepan over medium heat, melt butter and combine with rice-vermicelli mix. Stir until vermicelli turns golden brown. Gradually add water and seasoning packet, then bring to a boil. Cover, lower heat to simmer, and cook until rice is tender for 20 to 25 minutes. Let it sit covered for 3 to 5 minutes off heat. Transfer the rice to a large serving bowl and chill in the refrigerator.
  • Combine green onions, water chestnuts, celery, chicken, mayonnaise, Worcestershire sauce, salt, and pepper with the rice in a bowl, stirring until evenly mixed. Refrigerate until ready to serve.
