Easy, decadent salted chocolate tart enhances sweetness with a sprinkle of salt.
Ingredients:
  • sea salt flakes
  • 50 ml whole milk
  • 375 g shortcrust pastry
  • 300 ml double cream
  • 2 teaspoons caster sugar
  • 1 pinch of fine sea salt
  • 50 g unsalted butter (at room temperature)
  • 200 g dark chocolate (70%)
  • creme fraîche or ice cream
Instructions:
  • 1. Preheat your oven to 180°C/350°F/gas 4. 2. Roll out the pastry and line a 23cm greased tart tin. 3. Cover with baking paper, fill with dried beans, and bake blind for 10 to 15 minutes. 4. Remove the beans and bake for an additional 15 minutes or until golden. 5. In a pan, combine cream, sugar, and fine sea salt. Bring to a boil and remove from heat once it boils up. 6. Off the heat, add butter and chocolate. Stir until well combined. 7. After a short break, stir in the milk until the mixture is shiny. 8. Pour the chocolate mixture into the tart shell and let it set at room temperature for 2 hours. 9. Sprinkle sea salt flakes lightly all over the tart before serving with creme fraîche or ice cream.
