Ingredients:
  • 300 ml double cream
  • 2 level tablespoons caster sugar
  • 400 g quality dark chocolate (70%)
  • 90 g unsalted butter at room temperature
  • 100 ml milk
  • 1 tart shell baked blind
  • quality cocoa powder for dusting
Instructions:
  • In a pan, heat double cream, sugar, and a tiny pinch of sea salt until boiling. Break up chocolate. Remove mixture from heat once boiled, then add butter and chocolate. Stir until melted. Let cool slightly, then stir in cold milk until smooth. If mixture looks split, cool more and whisk in additional cold milk until smooth. Pour mixture into pastry shell, smooth with spatula. Set tart aside to cool for 1 to 2 hours at room temperature. Dust with cocoa powder before serving. The pastry should be short and crisp, filling smooth and easy to cut.
