Indulgent homemade mushroom soup with vibrant chive and thyme garnish.
Ingredients:
  • 1 pound fresh mushrooms
  • 0.25 cup salted butter
  • 4 green onions, thinly sliced
  • 3 cloves garlic, chopped
  • 1 teaspoon chopped fresh thyme
  • 2 tablespoons all-purpose flour
  • 4 cups vegetable broth
  • 1 cup light cream
  • 1 sprig fresh thyme leaves
  • 1 tablespoon chopped fresh chives
Instructions:
  • Slice the mushroom caps thinly, and remove the stalks.
  • In a sturdy pan, gently melt butter. Toss in green onions, garlic, and 1 teaspoon of lemon thyme leaves; sauté for 1 minute until garlic turns golden. Introduce mushrooms, salt, and white pepper; cook for 3 to 4 minutes until mushrooms slightly soften. Sprinkle in flour and cook, stirring continuously, for 1 minute.
  • Take the pot off the heat and pour in the broth while stirring constantly. Place the pot back on the heat and continue stirring until it comes to a boil. Lower the heat and simmer gently for 2 minutes, stirring occasionally.
  • Gently heat and stir in cream; make sure not to let it boil. Season with salt and pepper, then ladle into bowls and garnish with chives and remaining lemon thyme.
