Cream of mushroom soup and ketchup create a rich chipotle chile sauce for succulent beef.
Ingredients:
  • 1 (10 3/4-oz.) can condensed cream of mushroom soup
  • 1 (2-lb.) boneless beef top round steak (1 1/2 inches thick)
  • 1 tablespoon brown sugar
  • 2 tablespoons ketchup
  • 2 tablespoons chopped chipotle chiles in adobo sauce (from 7 or 11-oz. can)
  • 1 garlic clove, minced
  • 2 Italian plum tomatoes, chopped
  • 1/2 medium green bell pepper, cut into thin bite-sized strips
Instructions:
  • 1. Place the soup in a 4 to 5-quart slow cooker. Arrange beef round steak on top in a single layer, cutting into pieces if needed. 2. In a small bowl, mix brown sugar, ketchup, chiles, and garlic until well combined. Spread this mixture over the beef. 3. Add tomatoes on top.
  • Cover the dish and let it simmer on the Low setting for 8 to 9 hours.
  • 10 minutes before serving, stir in the colorful bell pepper, cover, and let it cook for another flavorful 10 minutes.
  • Serve the tender beef by transferring it from the slow cooker to a cutting board. Slice the beef into individual serving portions and drizzle with the flavorful sauce from the slow cooker before sharing with your guests.
