Mexican citrus-infused twist on a classic dessert.
Ingredients:
  • 3/4 cup sugar
  • 3 tablespoons boiling water
  • 6 eggs
  • 1/4 cup orange juice
  • 2 tablespoons finely grated orange peel
  • 1 teaspoon vanilla
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • Spun sugar, if desired
Instructions:
  • Preheat your oven to 325°F. Sprinkle sugar evenly over the bottom of a heavy skillet. Cook over medium heat, stirring constantly, until the sugar melts and forms a light caramel color. Add 3 tablespoons of boiling water, stirring until the sugar is completely dissolved. Pour this mixture into an ungreased quiche dish, 10-inch deep-dish pie pan, or 8-inch square baking dish. Tilt the dish to evenly coat the bottom and set it aside.
  • In a medium bowl, use an electric mixer to blend the remaining ingredients for 1 to 2 minutes until fully combined. Pour the mixture over the caramelized sugar in the baking dish. Place the baking dish in a larger pan, like a broiler pan, and add 1 inch of hot water to the larger pan.
  • Bake for 40-45 minutes until the mixture is nearly set and a knife inserted in the center comes out clean. Let it cool for 1 hour, then refrigerate for 1 hour. Run a knife around the edge, flip it onto a 12-inch round serving plate with raised edges, and garnish with spun sugar.
