Rich orange chocolate mousse

Ingredients:
  • 250g good-quality dark cooking chocolate (like Plaistowe Cooking Chocolate), chopped
  • 4 eggs, separated
  • 30mls (1 1/2 tbsp) orange liqueur (like Grand Marnier or Cointreau)
  • 250mls (1 cup) thickened cream
Instructions:
  • Melt chocolate in a heat-resistant bowl over simmering water, stirring occasionally, until smooth. If desired, you can also follow the microwave method mentioned.
  • Take the bowl off the heat and gently mix in the egg yolks and orange liqueur using a wooden spoon.
  • Whisk the egg whites until soft peaks form, then add sugar and whisk until thick and glossy. Gently fold a spoonful of egg whites into the chocolate mixture, then fold in the rest until well combined.
  • Whip the cream until soft peaks form using electric beaters or a hand whisk, then gently fold it into the chocolate mixture until fully combined.
  • Transfer the velvety mousse into your choice of elegant individual serving dishes or a beautiful larger serving dish. Seal them with plastic wrap and let them chill in the fridge for a minimum of 2 hours until perfectly cold and set.
