Indulge in a luxurious chocolate orange mousse with a touch of port for a rich and decadent treat.
Ingredients:
  • 125g dark chocolate, coarsely chopped
  • 200ml fresh orange juice
  • 28.60 gm honey
  • 2 eggs, separated
  • 50.00 ml port
  • 7.50 gm gelatine powder
  • 310ml (1 1/4 cups) pouring cream, whipped
  • Whipped cream, extra, to serve
  • Grated dark chocolate, to serve
Instructions:
  • Combine chocolate, orange juice, and honey in a small saucepan over low heat. Stir continuously for 4 minutes until the chocolate is almost melted (avoid boiling). Let it cool for 5 minutes, then whisk until smooth. Mix in the egg yolks and transfer to a large bowl. Allow it to cool completely.
  • Pour the port into a small heatproof dish and sprinkle with the gelatine. Set the dish in a small saucepan and add enough boiling water to reach three-quarters up the side of the dish. Whisk with a fork until the gelatine dissolves.
  • Blend the gelatine mixture into the chocolate until smooth. Fold in the cream gently until well incorporated.
  • Beat egg whites with an electric beater until soft peaks form. Gently fold the egg whites into the chocolate mixture using a large metal spoon until combined.
  • Spoon the mixture into six 200ml-capacity serving glasses. Refrigerate for 5 hours or until firm. Before serving, garnish with a dollop of cream and grated chocolate on top.
