Ingredients:
  • 250g caster sugar
  • 125ml port
  • 20.00 gm cocoa
  • 1 cinnamon stick
  • 4 packham or beurre bosc pears, peeled, stems intact
  • Thick cream, to serve
Instructions:
  • Combine the caster sugar, port, cocoa, cinnamon, and 3 cups of water in a saucepan. Stir over medium heat until the sugar is fully dissolved.
  • Add the pears to the mixture and simmer gently for 10 minutes. Then, carefully remove the pears and set them aside.
  • Bring the sauce to a boil and simmer for 25 minutes until it has reduced and thickened. Drizzle the syrup over the whole pears and serve with cream.
