Indulge in decadent chocolate pudding bliss with a simple, delicious drizzle.
Ingredients:
  • 150g dried figs, finely chopped
  • 60ml (1/4 cup) port
  • 60ml (1/4 cup) water
  • 175g unsalted butter, at room temperature
  • 250g raw caster sugar
  • 3 eggs
  • 300g (2 cups) self-raising flour
  • 50g (1/3 cup) plain flour
  • 35g (1/3 cup) dark cocoa powder
  • 125ml (1/2 cup) milk
  • 75g dark chocolate (70% cocoa), melted, cooled
  • Thickened cream, to serve
  • 125ml (1/2 cup) thickened cream
  • 100g dark chocolate (70% cocoa), chopped
  • 32.00 gm brown sugar
  • 20.00 ml port
Instructions:
  • Combine figs and port in a small saucepan and let them sit for 10 minutes to macerate. Stir in water and simmer for 5 minutes until liquid is absorbed. Let cool completely.
  • Next, generously coat a 2L (8 cup) pudding basin with melted butter and line the base with baking paper. In a separate bowl, use electric beaters to whip together the butter and sugar until the mixture is pale and creamy. Then, add the eggs one at a time, ensuring each is well incorporated before adding the next.
  • Sift the flours and cocoa into a bowl. Gradually add the flour mixture and milk to the butter mixture while beating on low speed until just combined. Then, mix in the chocolate until incorporated. Gently fold in the fig mixture.
  • Scoop mixture into basin and level the top. Cover with a piece of baking paper and foil, securing tightly. Place basin on a tea towel in a saucepan. Add enough boiling water to come halfway up the basin. Simmer for 2 hours 30 minutes to 2 hours 40 minutes until a skewer comes out clean. Rest for 15 minutes, then unmold onto a platter.
  • In a saucepan, combine cream, chocolate, sugar, and port. Stir over low heat for 3-4 minutes until smooth.
  • Begin by generously ladling half of the luscious sauce over the decadent pudding. Artfully drizzle the velvety cream over the top and elegantly present the dessert with the extra sauce served alongside. A delight for the senses awaits!
