French Chocolate Mousse with Orange

Decadent chocolate-orange mousse - rich, dairy-free, and low-carb made with eggs and chocolate.
Ingredients:
  • 1 orange, zested
  • 7 ounces dark chocolate (65 to 70% cocao), chopped into small pieces
  • 2 tablespoons strong brewed coffee, or more to taste
  • 6 eggs, separated, room temperature
Instructions:
  • Create a smooth orange zest paste by grinding it with a mortar and pestle.
  • In a double boiler over simmering water, melt chocolate with coffee and orange zest. Stir frequently and scrape down the sides with a rubber spatula to prevent burning. It should take about 5 minutes for the chocolate to melt. Once smooth, remove from heat and let it cool slightly.
  • Whisk egg whites and salt until stiff peaks form in a glass, metal, or ceramic bowl.
  • Gently mix egg yolks into the cooled chocolate mixture until fully incorporated. Pour over egg whites. Use a spatula to fold together until just combined.
  • Transfer the mixture into either 10 small dessert glasses or a single large serving dish. Chill in the refrigerator for at least 6 hours, preferably overnight.
