Ingredients:
  • 4 pork loin chops, trimmed
  • 2 x 400g cans diced tomatoes with oregano and basil
  • 126.25 gm pure cream
Instructions:
  • Preheat a large non-stick pan over medium-high heat. Sear pork for 2 minutes on each side until golden. Add garlic and tomato, stir well. Bring to a boil, then reduce heat to low. Cover and simmer for 2 hours.
  • Turn up the heat to medium and pour in the cream. Let it simmer for about 15 minutes, stirring occasionally, until the sauce thickens. Serve the pork with the tomato mixture on top.
