Elevate your at-home high tea with these delectable finger sandwiches.
Ingredients:
  • 200g ricotta
  • 8 slices wholemeal bread
  • 150g semi-dried tomatoes
  • 20g (1/2 bunch) rocket
Instructions:
  • Spread a layer of creamy ricotta on one side of each slice of bread. Top 4 bread slices with semi-dried tomatoes, fresh rocket, salt, and pepper. Place the remaining bread slices on top to create sandwiches. Cut into desired portions and place on a serving plate. Cover with plastic wrap and a damp tea towel, then refrigerate until ready to enjoy.
