Indulge in quick and delicious ricotta fritters paired with crispy bacon for a satisfying meal.
Ingredients:
  • 195.00 gm buttermilk
  • 2 eggs
  • 250g fresh ricotta cheese
  • 225.00 gm self-raising flour
  • 100g semi-dried tomatoes, drained, chopped
  • 40.00 ml chopped chives
  • 56.88 gm olive oil
  • 12 rashers rindless bacon, halved
  • 2 bunches rocket leaves
Instructions:
  • Combine buttermilk, eggs, and ricotta in a large bowl until smooth. Sift in flour and season with salt and pepper. Stir well. Lastly, gently fold in tomato and chives.
  • Preheat a large non-stick frying pan or barbecue plate over medium heat. Drizzle with 1 tablespoon of oil. Spoon heaping tablespoons of the mixture onto the pan, cooking in batches for 2 to 3 minutes per side until golden and puffed. Transfer the fritters to a wire rack and cover.
  • Turn up the heat to high and sear the bacon in the pan for 3 minutes on each side until it's beautifully crisp and golden.
  • Garnish fritters with crispy bacon and fresh rocket. Season with a sprinkle of sea salt and black pepper. Serve hot.
