Indulge in fluffy ricotta fritters topped with sweet honeyed apples for a delightful treat any time of day.
Ingredients:
  • 250g fresh ricotta
  • 20.20 gm cream
  • 32.50 gm rice flour
  • 1.25 gm mixed spice
  • 690.00 gm vegetable oil
  • Pure icing sugar, sifted, to serve
  • 20g butter
  • Granny smith apples, peeled, thinly sliced
  • 117.98 gm honey
Instructions:
  • Using an electric beater, blend ricotta, cream, egg, sugar, flour, and mixed spice until smooth. Refrigerate mixture for 10 minutes.
  • In a medium frying pan, melt butter. Add apples and cook, stirring, until softened, about 3 minutes. Stir in honey and cook until apples caramelize and honey slightly reduces, about 3 minutes.
  • Heat oil in a saucepan until shimmering. Fry heaping tablespoons of ricotta mixture in batches of 3 until golden brown. Transfer fritters to a paper towel-lined plate using a slotted spoon. Sprinkle fritters with powdered sugar and serve alongside honeyed apples.
