Tomato and herbed ricotta tarts

Impress your guests with these delightful ricotta and tomato tarts, perfect for any gathering.
Ingredients:
  • 300g fresh ricotta
  • 2 eggs, lightly beaten
  • 40.00 ml finely chopped fresh chives
  • 40.00 ml finely chopped fresh basil
  • 62.50 ml finely grated parmesan cheese
  • 4 sheets filo pastry
  • Olive oil cooking spray
  • 125.00 ml semi-dried tomatoes, drained, halved
Instructions:
  • Combine ricotta, eggs, fresh chives, basil, and Parmesan cheese in a bowl. Mix well until fully incorporated, then season generously with salt and pepper to enhance the flavors.
  • Preheat your oven to 180°C/160°C fan-forced. Grease three 12-hole patty pans with a 1 1/2 tablespoon capacity each. Layer and spray filo sheets with oil. Cut the filo stack into squares to make 32 squares, then use them to line the prepared pans.
  • Dollop 1 tablespoon of ricotta mixture into each case. Arrange 2 slices of semi-dried tomatoes in a cross pattern on top. Lightly spray with oil. Bake for 25 minutes or until ricotta mixture sets. Serve fresh from the oven.
