Elevate your potato salad with vibrant fresh herbs!
Ingredients:
  • 8 small red potatoes (1 pound)
  • 1/2 cup chopped fresh basil leaves or 3 tablespoons dried basil leaves
  • 1/3 cup chopped fresh sage leaves or 2 tablespoons dried sage leaves
  • 1/2 cup fresh mint leaf or 2 tablespoons dried mint leaves
  • 1/2 cup olive or vegetable oil
  • 1/2 cup white wine vinegar
  • 5 roma (plum) tomatoes, cut into fourths
  • 1 small onion, finely chopped (1/4 cup)
Instructions:
  • In a saucepan, bring 1 inch of water (you can add salt if desired) to a boil. Add potatoes, cover, and simmer until tender for 20 to 25 minutes. Drain, cool, and cut into 1/2-inch slices.
  • Combine the potatoes with the remaining ingredients, stirring gently. Cover and refrigerate for about 2 hours, stirring occasionally until chilled.
