Ricotta-Mascarpone Mousse with Balsamic Strawberries

Light and airy ricotta-mascarpone mousse with balsamic-marinated strawberries - a quick and delicious treat.
Ingredients:
  • 1 cup heavy whipping cream
  • 1 pound whole milk ricotta cheese
  • 8 ounces mascarpone cheese
  • 3/4 cup granulated sugar
  • Grated zest of one lemon
  • 2 pounds strawberries, hulled and cut into quarters
  • 1/4 cup balsamic vinegar , or to taste
Instructions:
  • Whip mascarpone: In a large bowl, use a rubber spatula to beat the mascarpone cheese until smooth and creamy. Spread it evenly in the bowl to allow it to reach room temperature while you whip the cream.
  • In a large bowl, whip the cream until it forms soft peaks. Set aside.
  • Make the ricotta mascarpone mixture by folding ricotta, 1/2 cup sugar, and lemon zest into the beaten mascarpone until smooth.
  • Incorporate whipped cream into ricotta mixture: Gently combine the whipped cream into the ricotta until smooth. Refrigerate covered for 2 hours.
  • Combine strawberries, sugar, and balsamic: Transfer strawberries to a bowl and gently fold in the remaining 1/4 cup of sugar and balsamic vinegar 30 minutes before serving.
  • When you're ready to serve, layer the strawberries and their juices in glass bowls. Top with the ricotta-mascarpone mousse using a spoon or pastry bag. Serve immediately. Enjoy the dish? Share your feedback below!
