Roast beef and dijon sandwiches

Whip up a delicious roast beef sandwich with creamy avocado and pea spread for a quick and satisfying meal!
Ingredients:
  • 40g (1/4 cup) frozen peas, thawed
  • 1/2 small avocado
  • 2 Sandwich Thins
  • 1 small zucchini, peeled in thin ribbons
  • 1 small carrot, peeled in thin ribbons
  • 120g thinly sliced rare roast beef
  • 20g baby spinach
Instructions:
  • Place the peas in a heatproof bowl and cover with boiling water. Let them sit for 1 minute, then drain and rinse under cold water. Transfer to a paper towel to dry.
  • Combine the avocado and peas in a bowl, then season with salt and pepper before mashing until smooth using a fork or small stick blender.
  • Divide sandwich thins to create a base. Spread mustard on 2 halves and avocado mixture on the other 2 halves. Arrange zucchini, carrot, and beef on the mustard-coated halves. Adjust vegetable sizes to fit as necessary. Finish with a layer of spinach on top.
  • Top the sandwiches with creamy avocado slices and softly press together. Slice each sandwich in half before presenting.
