Impress Dad this Father's Day with a delicious and hearty main dish that will show him how much you care.
Ingredients:
  • 1.2kg piece beef eye fillet
  • Olive oil
  • 400ml good-quality red wine
  • 270ml jar Bowles Veal Glace
  • 11.80 gm Dijon mustard
Instructions:
  • Preheat oven to 200C. Secure beef with cooking string to create an even shape. Coat beef with oil, season generously with salt and pepper. Sear beef in a hot roasting pan, then roast in the oven for 30 minutes until desired doneness. Rest beef under foil for 10 minutes before making sauce.
  • In a small saucepan, bring wine to a boil over high heat. Reduce to medium heat and simmer for 10 minutes until reduced by three-quarters. Whisk in veal glace and mustard until sauce is blended. Simmer for another 3-5 minutes until thick and syrupy.
  • Cut the beef into thick slices and then generously drizzle with red wine sauce before serving.
