20-Minute Veggie Pizza with Capsicum, Zucchini, Feta, and Rocket. Perfect for a quick and delicious meatless meal.
Ingredients:
  • 125ml (1/2 cup) tomato & basil pasta sauce
  • 2 x 250g rectangular pizza bases
  • 150g bought chargrilled capsicum, thinly sliced
  • 1 large zucchini, thinly sliced
  • 40g (1/4 cup) pitted kalamata olives, halved
  • 100g low-fat feta, crumbled
  • 80g baby rocket leaves
Instructions:
  • Preheat the oven to 220°C and place a large baking tray inside to preheat for 5 minutes.
  • Evenly spread the pasta sauce on the pizza bases. Top with capsicum, zucchini, and olives. Sprinkle with feta cheese and season with pepper.
  • Arrange the pizzas on the prepared tray and bake in the oven for 8-10 minutes until the crust is crisp and golden. Sprinkle the baby rocket leaves on top, slice, and serve hot.
