Elevate your holiday meal with a perfectly roasted chicken, crispy golden skin flavored with garlic, lemon, orange, and savory seasonings.
Ingredients:
  • 1 (4 pound) whole chicken
  • 1 cup butter at room temperature
  • 1 whole head garlic, minced
  • 3 lemons, zested
  • 1 orange, zested
  • 2 tablespoons chopped chives
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon chopped fresh thyme
  • 1.5 teaspoons salt
  • 1.5 teaspoons ground black pepper
  • 1 teaspoon ground coriander
Instructions:
  • Pat chicken dry with paper towels and let it air-dry for 30 minutes.
  • Preheat oven to 300°F (150°C) for the perfect temperature to start cooking.
  • Combine butter, garlic, lemon zest, orange zest, chives, sesame oil, thyme, salt, black pepper, and coriander in a bowl until well mixed. Gently separate skin from chicken breast and thighs; generously spread butter mixture over entire chicken, ensuring to coat inside cavity. Slide butter mixture under loosened skin.
  • Position the chicken on a rack inside a roasting pan with the breast side facing down. Seal the chicken by covering it with aluminum foil and securing the edges to the roasting pan.
  • Roast the chicken in the preheated oven for 1 hour. Uncover the pan, turn the chicken over with the breast side facing up, and roast for an additional 20 minutes or until a meat thermometer reads 165 degrees F (75 degrees C) when inserted into the thickest part of a thigh.
  • Preheat oven to 400 degrees F (205 degrees C) to achieve a beautifully golden-brown chicken skin. Roast the chicken for an additional 10 minutes, then allow it to rest for 10 minutes before carving.
