Elevate Christmas with a simple twist on mayonnaise.
Ingredients:
  • 10 garlic cloves, unpeeled
  • Olive oil cooking spray
  • 5.90 gm dijon mustard
  • 20.00 ml white wine vinegar
  • 2.40 gm sea salt
  • 1/4 tsp white pepper
  • 227.50 gm extra light olive oil
Instructions:
  • Preheat the oven to 180°C/ 160°C fan-forced. Line a baking tray with parchment paper, then place garlic on the tray and spray with oil. Roast for 15 minutes until tender. Let it cool for 10 minutes, then squeeze garlic from skins, discard the skins, and set aside to cool completely.
  • Blend egg yolks, roasted garlic, mustard, vinegar, salt, and pepper until smooth and frothy.
  • While the blender is running, slowly drizzle in the oil until the mixture becomes thick and creamy. Serve.
