Roast garlic & spinach puree

Ingredients:
  • 250g bag single clove garlic
  • 125ml olive oil
  • 100g baby spinach leaves
  • 100g toasted walnuts
  • 42.00 gm lemon juice
  • Sea salt & freshly ground black pepper, to taste
Instructions:
  • Preheat the oven to 180°C. Place whole garlic cloves on foil and drizzle with a tablespoon of oil. Roast for 30 minutes, then allow to cool.
  • Rinse spinach in a colander over the sink with boiling water until wilted. Cool under running water, then squeeze out excess moisture.
  • Peel garlic and gently press the cloves into a food processor. Add spinach and nuts, then blend until paste forms. While blending, pour in oil slowly. Add lemon juice, salt, and pepper, and mix thoroughly. Transfer the puree to an airtight container and refrigerate for up to 1 week.
