Roast garlic mayonnaise

Make your own delicious mayo at home, no need to buy store-bought again!
Ingredients:
  • 1 whole garlic bulb
  • 2 egg yolks, at room temperature
  • 2 tsp red wine vinegar
  • Pinch of salt
  • 100ml olive oil
  • 100ml vegetable oil
Instructions:
  • Preheat the oven to 200°C. Wrap the garlic bulb in foil and roast for 30 minutes. Let it cool for 5 minutes before using.
  • In a glass or ceramic bowl, whisk together the egg yolks, vinegar, and salt until well combined.
  • Carefully stream the oil into the egg yolk mixture while continuously whisking until thick and well combined.
  • Extract the luxurious garlic pulp from the skins and combine it with the creamy mayonnaise. Enhance it with a dash of salt and pepper to elevate the flavors.
