Elevate your dishes with roasted garlic - perfect for mashed potatoes, pasta, and meat dishes. Master the simple art of roasting garlic with these quick steps.
Ingredients:
  • 4 whole garlic bulbs
  • 4 sprigs fresh rosemary, leaves picked
  • 36.40 gm olive oil
  • 21.00 gm fresh lemon juice
  • Salt & ground black pepper, to taste
  • Toasted crusty bread, to serve
  • 2 egg tomatoes, sliced, to serve
Instructions:
  • Preheat your oven to 200°C. Trim the tops of the garlic bulbs by 1cm to reveal the cloves. Remove the tops and place the bulbs in an ovenproof dish. Scatter rosemary leaves on top, then drizzle with olive oil and lemon juice. Season generously with salt and pepper.
  • Wrap the dish snugly with foil and bake in a hot oven for 55 minutes, or until the garlic is tender when pierced with a skewer.
  • Take out the roasted garlic from the oven and let it rest, covered, for 10 minutes.
  • Extract the garlic from the cloves and smear it on the crusty bread. Serve with the sliced tomatoes.
