Roast honey and cumin pumpkin

Ingredients:
  • 1kg Queensland blue pumpkin (see note), peeled, deseeded, sliced into 1cm-thick wedges
  • 18.20 gm olive oil
  • 14.40 gm honey
  • 2 tsp cumin seeds
Instructions:
  • Preheat your oven to 200°C. Arrange pumpkin in a greased roasting pan. Mix oil, honey, and cumin seeds in a jug, then drizzle over the pumpkin. Season with salt and pepper, then toss to evenly coat.
  • Roast the pumpkin until golden and tender, for 45 to 50 minutes. Serve.
