Delicious roast pork and apple sliders for all ages to enjoy.
Ingredients:
  • 1kg pork loin roast
  • Olive oil
  • Sea salt
  • 54.00 gm maple syrup
  • 20.00 gm water
  • 3 large granny smith apples, peeled, cored, cut into 1–2cm pieces
  • 62.50 ml mint leaves, finely chopped
  • 8 ciabatta rolls
  • Butter, for spreading on rolls
  • 8 small iceberg lettuce leaves, washed and dried, torn
Instructions:
  • 1. Preheat your oven to 220C (200C fan-forced) to ensure a perfect roast. Rub the pork generously with oil and salt, ensuring an even coating 2. Place the seasoned pork on a rack lined with foil in a roasting pan to roast for 15 minutes, giving the skin a blistering start towards a crispy crackling. 3. Lower the heat to 200C (180C fan-forced) and continue roasting for 1 hour 15 minutes to 1 hour 30 minutes until the crackling is golden and the pork is cooked through. 4. Allow the pork to cool then wrap it in foil and chill.
  • Prepare the apple sauce by combining maple syrup, water, lemon juice, and apples in a saucepan. Cover and bring to a boil over medium heat, then simmer for 8-10 minutes. Uncover, continue cooking to reduce liquids. Remove from heat, stir in mint, season with salt and pepper. Let cool, store in an airtight container, and refrigerate until serving.
