Brown sugar and pepper crusted pork

Impress your guests with a savory roast pork and apple dish, caramelized with brown sugar.
Ingredients:
  • 90.00 gm brown sugar
  • 2 tsp cracked black pepper
  • 2.40 gm sea salt
  • 1.25kg piece pork scotch (neck)
  • 36.40 gm extra virgin olive oil
  • 3 garlic cloves, halved
  • 1.25kg baby red delight potatoes
  • 8 large eschalots, peeled
  • 4 sprigs fresh rosemary
  • 3 gala apples, cored, quartered
  • 375.00 ml cooked peas, to serve
  • Gravy, to serve
Instructions:
  • Preheat your oven to 150C/130C fan-forced and line a large roasting pan with baking paper.
  • Mix sugar, pepper, and salt in a bowl, then transfer to a large plate. Coat pork evenly with the mixture. Put pork in a prepared pan, drizzle with half of the oil, and bake on the bottom shelf of the oven for 2 hours.
  • Spread garlic, potatoes, eschalot, and rosemary on a greased baking tray. Drizzle with the remaining oil and season with salt and pepper. Bake on the top oven shelf for 1 hour 30 minutes, or until the pork is tender. Remove pork from oven and cover with foil to keep warm.
  • Preheat oven to 220C/200C fan-forced. Combine apple wedges with the potato mixture and roast for 20 minutes until apples are softened. Slice pork and serve with roast potatoes, apples, peas, and gravy.
