Slow-Cooker Brown Sugar-Topped Pork with Sweet Potatoes

Brown sugar and cayenne pepper create a mouthwatering seasoning for pork and sweet potatoes.
Ingredients:
  • 4 medium sweet potatoes (about 2 1/2 pounds), peeled and cut into 1/2-inch slices
  • 2 1/2-pound pork boneless shoulder roast (tied or in netting)
  • 2 teaspoons salt
  • 1 clove garlic, finely chopped
Instructions:
  • Layer sweet potato slices in a 5 to 6-quart slow cooker. Add pork on top of the sweet potatoes. Combine the remaining ingredients in a small bowl, then sprinkle over the pork and potatoes.
  • Slow cook covered for 8 to 10 hours on low heat.
  • Take the pork out of the cooker and transfer it to a cutting board. Remove any strings or netting from the pork. Slice the pork or use 2 forks to pull it into serving pieces. Serve with sweet potatoes and spoon the juices over the pork.
