Slow cooker pork loin roast with sweet potatoes in a sweet buttery brown sugar sauce.
Ingredients:
  • 1 tablespoon pork rub seasoning, or to taste
  • 0.25 teaspoon Chinese five-spice powder
  • 1 (3 pound) pork loin roast
  • 2 medium sweet potatoes, peeled and cut into bite-size pieces
  • 0.5 cup brown sugar
Instructions:
  • Combine the pork rub seasoning and Chinese five-spice powder in a small bowl, then generously massage the mixture onto the pork roast.
  • Layer the sweet potatoes at the base of the slow cooker, sprinkle with brown sugar and dot with butter. Arrange the roast on top and season generously with salt and pepper.
  • Slow cook until the roast is easily pierced with a fork, for 6 to 7 hours. Use an instant-read thermometer - the center should reach at least 145°F (63°C).
