"Crockpot pork loin with apples, sauerkraut, and onions in savory broth - a mouthwatering meal ready when you walk in the door."
Ingredients:
  • 2 tablespoons spicy horseradish mustard
  • 1 (4 pound) boneless pork loin roast
  • 1 onion, chopped
  • 1 Granny Smith apple, chopped
  • 1 (16 ounce) can sauerkraut with juice
  • salt and pepper to taste
  • 1.5 cups chicken broth
Instructions:
  • Massage the pork loin with piquant horseradish mustard. Arrange a bed of onions and apples in the slow cooker before placing the pork loin on top. Cover with sauerkraut and its flavorful juices. Season generously with salt and pepper, then pour in chicken broth for a delicious base.
  • Slow cook until the pork is melt-in-your-mouth tender, about 6 to 8 hours. Check with an instant-read thermometer - it should show a minimum of 145 degrees F (63 degrees C) in the center.
