Tender slow cooker pork roast with sauerkraut and kielbasa, served over creamy mashed potatoes for a comforting meal.
Ingredients:
  • 1 tablespoon bacon drippings
  • 1 cup minced onion
  • 1 large red apple, diced
  • 1 teaspoon caraway seeds
  • 2 pounds sauerkraut, drained and rinsed
  • 0.5 cup dry white wine
  • 0.5 cup chicken stock
  • 2 tablespoons brown sugar
  • 2 pounds boneless pork loin roast
  • 1 pound kielbasa sausage, cut into 3-inch pieces
Instructions:
  • In a Dutch oven, heat the bacon drippings over medium heat. Sauté the onion until soft and translucent, about 5 minutes. Add the apple and caraway seeds, and cook until the apple is just tender, around 3 minutes. Mix in the sauerkraut until well combined.
  • Combine white wine, chicken stock, and brown sugar in a medium bowl; then drizzle over sauerkraut mixture.
  • Place the pork roast in the slow cooker and generously pour the sauerkraut mixture over it.
  • Slow cook the pork until it effortlessly shreds with a fork, 6 to 8 hours. Introduce the sausage and cook until heated through, 15 to 20 minutes longer.
