Slow cooker pork tenderloin with baby potatoes and sauerkraut - a fuss-free, hearty one-pot meal.
Ingredients:
  • 1 (1 pound) whole pork tenderloin
  • 1 (24 ounce) bag baby potatoes, unpeeled
  • 1 (20 ounce) can sauerkraut, undrained
  • 1 cup water, or more as needed
  • 0.25 cup butter, cubed
  • salt and ground black pepper to taste
Instructions:
  • Assemble all ingredients.
  • Lay pork tenderloin in the slow cooker. Surround with potatoes and pour sauerkraut and juice on top. Add water, butter cubes, salt, and black pepper.
  • Slow cook until the pork is tender, which typically takes 8 to 10 hours. If the mixture appears dry after 8 hours, simply add more water.
