Ingredients:
  • 4 small apples (golden delicious, Granny Smith), cored, stalks intact
  • 100g unsalted butter, softened
  • 4 pork loin chops
  • 40ml (2 tbsp) vegetable oil
  • 1 onion, chopped
  • 8 sage leaves
  • 40ml (2 tbsp) white wine vinegar
  • 100ml dry cider
  • 150ml thick cream
  • 100ml chicken style liquid stock
  • 5.90 gm Dijon or wholegrain mustard
Instructions:
  • Preheat the oven to 180°C. Cut a small slit in the center of each apple, then massage with half of the butter. Place on a baking tray, season, and bake in the oven for 30 minutes.
  • Season both sides of the chops. Heat oil in a large frypan over high heat. Cook the chops for 2 minutes on each side. Transfer the chops to a baking tray. Add the remaining butter, onion, and sage to the pan. Cook for 30 seconds. Pour in the vinegar and cider, season, and cook until reduced by half. Add the rest of the ingredients and cook for 2-3 minutes until thickened.
  • Place the pork chops in the oven for 5 minutes while the apples finish cooking. Quickly blend the sauce in a food processor or with a hand-held blender, then heat it gently. Serve the chops with a baked apple, a drizzle of sauce, and mash on the side, if preferred.
