Pork cutlets with creamy mustard sauce that'll have you licking your plate clean!
Ingredients:
  • 800g Desiree potatoes, unpeeled, cut into wedges
  • 2 red capsicum, deseeded, thickly sliced
  • 73.13 gm wholegrain mustard
  • 18.20 gm olive oil
  • 84.15 gm chicken style liquid stock
  • 4 (250g each) rindless pork loin cutlets
  • 126.25 gm thickened cream
  • 62.50 ml flat-leaf parsley leaves, chopped
  • Salt, to season
Instructions:
  • Preheat your oven to 200°C. Place the potatoes and capsicum in a large roasting pan, then mix mustard, oil, stock, salt, and pepper in a jug. Pour the mixture over the vegetables and toss to combine.
  • Lay the pork cutlets over the colorful medley of vegetables. Season generously with salt and pepper. Roast in the oven for 30 minutes or until the pork is perfectly cooked. Transfer the pork to a plate, cover with foil, and let it rest for 10 minutes before serving.
  • Add the cream and parsley to the vegetables in the pan, stirring to combine. Return to the oven for 10 minutes or until heated through.
  • Divide vegetables and pork among plates. Top with luscious creamy mustard sauce. Enjoy!
