Roast potatoes with sea salt & herbs

Ingredients:
  • 125ml (1/2 cup) vegetable oil
  • 6 medium (about 160g each) pontiac, desiree or pink-eye potatoes, halved crossways
  • 2.40 gm salt
  • 20.00 ml coarsely chopped fresh rosemary
  • 20.00 ml coarsely chopped fresh oregano
  • 4.80 gm sea salt flakes
  • Freshly ground black pepper
Instructions:
  • 1. Preheat the oven to 180°C. Heat oil in a large, deep frying pan over high heat. Add potatoes and shallow-fry, turning occasionally, for 5 minutes until lightly golden. Set aside reserved oil.
  • Grease a large roasting pan with a hint of the reserved oil. Arrange potatoes in a single layer in the pan. Drizzle with 1 tablespoon of the oil and sprinkle with salt. Toss gently to coat evenly. Roast in a preheated oven for 55 minutes, turning occasionally, until golden and tender. Remove from oven.
  • Transfer the potatoes to a serving bowl, then mix the rosemary, oregano, and sea salt in a small bowl. Sprinkle the herb mixture over the potatoes, season with pepper, and serve them right away.
