Crispy and fluffy roast new potatoes.
Ingredients:
  • 1 kg Jersey Royal potatoes
Instructions:
  • Preheat the oven to 220ºC/425ºF/gas 7. Wash the potatoes and parboil until almost tender, then drain. Roughly chop the rosemary leaves. Drizzle the potatoes with a touch of oil and sprinkle with a teaspoon of sea salt, some freshly ground black pepper, and the chopped rosemary. Transfer the potatoes to a roasting tray and bake in the oven for 25 minutes until golden, or wrap in foil and cook on the grill for the same amount of time.
