Roast pumpkin and walnut dip

Ingredients:
  • 500g butternut pumpkin, peeled, cut into 2cm cubes
  • 36.40 gm olive oil
  • 57.50 gm walnuts
  • 187.50 ml reduced-fat plain Greek-style yoghurt
  • 2 tsp Moroccan seasoning
  • 20.00 ml fresh coriander leaves
Instructions:
  • Preheat your oven to 200°C (180°C fan-forced).
  • Line a baking tray with parchment paper and place the pumpkin on it. Drizzle with oil and mix well. Roast for 20-25 minutes until the pumpkin is tender. Let it cool for 10 minutes before serving.
  • Blend walnuts until coarsely chopped. Combine with pumpkin, yogurt, seasoning, and coriander. Season with salt and pepper. Blend until mixed. Serve and enjoy!
