Versatile fridge sauce perfect for pasta, pizza, and more!
Ingredients:
  • 1kg roma tomatoes
  • 1 large red onion, cut into thin wedges
  • 2 garlic cloves, sliced
  • 62.50 ml fresh oregano leaves
  • 61.88 gm red wine
  • olive oil cooking spray
Instructions:
  • Preheat the oven to 180°C/160°C fan-forced. Lightly grease a large ceramic baking dish. Score a cross on the bottom of each tomato, then place them in a heatproof bowl. Pour boiling water over the tomatoes and let sit for 2 to 3 minutes until the skin starts to peel. Drain, then peel, deseed, and roughly chop the tomatoes.
  • In a prepared dish, mix together tomatoes, onion, garlic, oregano, and wine. Lightly spray with oil and cover with foil. Roast for 30 minutes, then remove the foil and roast for an additional 45 minutes, or until the tomatoes are very soft and the onion is tender. Let it stand for 10 minutes before serving.
  • Process the tomato mixture until it is nearly smooth. Transfer the mixture into hot sterilized jars, seal them, and briefly invert the jars for 2 minutes before setting them right side up. Allow them to cool before refrigerating unopened for 1 week. Once opened, refrigerate for up to 2 days.
