Versatile roasted tomato sauce for pasta or pizza, customize to match your dish.
Ingredients:
  • 8 (about 1kg) ripe egg tomatoes, halved lengthways, cored
  • 60ml (1/4 cup) olive oil
  • Salt & freshly ground black pepper
  • 1 brown onion, halved, finely chopped
  • 2 garlic cloves, crushed
  • 44.40 gm tomato paste
Instructions:
  • Preheat your oven to 160°C. Arrange tomatoes, cut-side up, in a large roasting pan. Drizzle with 2 tablespoons of oil and season with salt and pepper. Roast in the oven for 30 minutes until tender. Take them out. (Roasting the tomatoes enhances their flavor by concentrating the natural sweetness.)
  • Heat the remaining oil in a large saucepan over medium-low heat. Sauté the onion and garlic for 10 minutes, stirring occasionally, until the onion softens.
  • Combine the tomatoes and tomato paste with the onion mixture, stirring constantly for 5 minutes until fully incorporated. Set aside to cool for another 5 minutes.
  • Blend the tomato mixture using a hand blender until smooth. Alternatively, process the tomato mixture in a food processor until smooth.
  • Season with a pinch of salt and pepper, stirring gently over low heat for 5 minutes until piping hot. Serve right away or let cool for 15 minutes before storing in an airtight container in the fridge or freezer.
