Roast tomatoes on welsh rarebit

Ingredients:
  • 4 vines of cherry tomatoes (about 6 tomatoes on each)
  • 50g butter
  • 20.00 ml plain flour
  • 80ml beer
  • 20.00 ml dry mustard powder
  • 225g strong cheddar cheese, grated
  • 1 egg yolk
  • 4 thick slices wood-fired bread
  • Chives, cut into 5cm pieces, to garnish
Instructions:
  • Heat your oven to a precise 220°C.
  • Spread tomatoes on a baking tray, generously coat with oil, and sprinkle with sea salt and pepper. Roast in the oven for 15 minutes until tender, then keep warm.
  • In a saucepan, melt butter, then stir in flour and cook over low heat for 1 minute. Mix in beer, mustard, and cheese until creamy, without boiling. Remove from heat, blend in egg yolk until fully combined. Toast bread, spread evenly with cheese mixture, broil until bubbly. Top with tomatoes, sprinkle with chives before serving.
