Roast turkey with almond & tarragon stuffing

Indulge in a classic Christmas feast with a delicious turkey recipe and all the fixings.
Ingredients:
  • 3kg whole turkey
  • 50g butter, melted
  • Gravy, to serve
  • Green beans, steamed, to serve
  • 50g butter
  • 1 medium leek, trimmed, halved, washed, chopped
  • 2 garlic cloves, crushed
  • 2 middle bacon rashers, trimmed, chopped
  • 125.00 ml blanched almonds, toasted, chopped
  • 40.00 ml chopped fresh tarragon
  • 500.00 ml fresh breadcrumbs
  • 1 egg, lightly beaten
Instructions:
  • In a frying pan over medium heat, melt butter and sauté leek until softened, about 5 minutes.
  • Combine the garlic and bacon in the pan. Cook for 3 minutes, stirring occasionally until the bacon turns golden. Transfer the mixture to a heatproof bowl and let it cool for 10 minutes.
  • Combine the almonds, tarragon, breadcrumbs, and egg in a bowl, then season generously with pepper.
  • Preheat the oven to 180C (160C fan-forced). Remove and discard the neck from the turkey, then thoroughly rinse the turkey, including the cavity, under cold water.
  • Dry the turkey with paper towels, then stuff the neck and large cavity with the delicious stuffing. Use toothpicks to secure the skin over the stuffing and tie the legs together with kitchen string.
  • Place the turkey on a greased wire rack in a large roasting pan and pour in 2 cups of cold water.
  • Coat the turkey with luscious butter and generously season with salt and pepper. Seal the pan with a snugly fit greased foil.
  • After 2 hours, unwrap the foil and continue roasting for an additional 40-50 minutes until the turkey is golden and the thigh juices run clear when pierced with a skewer.
  • Loosely cover the turkey with foil and let it rest for 10 minutes. Then, remove and discard the toothpicks and string.
  • Plate the turkey alongside rich gravy and flavorful green beans.
