Beer-lime roasted whole chicken for a juicy, flavorful main dish.
Ingredients:
  • 1 (5 pound) whole chicken
  • 1.5 limes, halved
  • 1 clove garlic, minced
  • 1.5 teaspoons ground black pepper
  • 1.5 teaspoons dried rosemary
  • 0.5 (12 ounce) can beer
  • 0.25 red onion, peeled
  • 1 cup water
Instructions:
  • Heat your oven to a toasty 350 degrees F (175 degrees C). Give the chicken a good rinse inside and out, then gently pat dry the skin with paper towels.
  • Drizzle lime juice over the chicken skin and tuck the squeezed halves inside. Fill the cavity with minced garlic. Combine salt, black pepper, and rosemary in a bowl, then rub the mixture onto the chicken.
  • Stand the chicken upright in a roasting pan, ensuring the beer can is inserted deep enough to keep the chicken stable. Place the onion in the neck cavity to seal in steam. Add water to the pan.
  • Place the chicken upright in the preheated oven and roast until crispy and an instant-read meat thermometer inserted into the thickest part of a thigh reads 180°F (80°C), for 1 1/2 to 2 hours. Occasionally baste with pan drippings. Rest the chicken for about 10 minutes before serving.
