Delicious lemon-garlic infused beer can roasted chicken variation.
Ingredients:
  • 1 (4 pound) whole chicken
  • 0.25 cup butter, melted
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • salt and pepper to taste
  • juice of 1 fresh lemon, divided
  • 1 (12 ounce) can lemon-lime soda (such as Sprite®)
  • 1 small whole onion, peeled
  • 1 squeezed lemon half
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C), then gently remove the giblets from the chicken and thoroughly rinse both the inside and outside with water. Finally, pat dry using paper towels.
  • Combine butter, brown sugar, garlic, salt, pepper, and half of the lemon juice in a bowl. Massage the mixture onto the whole chicken, ensuring to cover the cavity and underneath the skin.
  • Pour out half the soda, leaving the remaining in the can. Add lemon juice to the can. Stand the can upright on a baking sheet. Place the chicken over the can, inserting it into the cavity. Seal the neck opening with onion and a half of a squeezed lemon to trap steam.
  • Roast the chicken at the set temperature until it reaches an internal temperature of 180°F (80°C). Take the chicken out of the oven, remove the can, and let it rest covered with foil for 10 minutes before slicing.
